This recipe is really simple. I took a recipe I found and made some changes, it came out yummy!
Low carb chicken & turkey sausage casserole
INGREDIENTS:
4 cups cooked chicken
1 lb turkey sausage
1 tsp paprika
1/2 tsp black pepper
24 oz (more or less depending on your preference) shredded cheddar cheese
1-12 oz bag cauliflower
1-12 oz bag broccoli
1 stalk of celery
1/2 lb mushrooms
1/4 cup chopped onion
8 oz weight watchers cream cheese
DIRECTIONS:
Brown the sausage with the celery, onion and, mushrooms. Add 1/2 tsp black pepper. Stir softened cream cheese into sausage mixture until well blended. Coarsely chop the cooked cauliflower & broccoli. Mix all of the ingredients and spread in a greased 9x13" baking dish. If desired, dust top with paprika. Bake at 350 for ~40 minutes until the top is nicely browned.
