Recipe: Shrimp Salsa Tacos

Ingredients:
3/4 cup chunky style salsa
1/2 cup frozen chopped green bell peppers
3/4 pound uncooked medium shrimp, thawed if frozen and tails and shells removed
12 taco shells
3/4 cup shredded Mexican cheese
3/4 cup shredded lettuce
1/4 cup taco sauce


In 12 inch non-stick skillet heat bell peppers and salsa, over medium high heat, stirring frequently until warm.
Stir in shrimp.  Cook for 3-4 minutes, turning frequently, or until shrimp turn pink.
Heat taco shells according to package directions.
Fill each taco shell with 1/4 cup mixture (or enough to your liking)
Top with cheese, lettuce, and taco sauce.

Well...If I was ONLY watching what I eat, I would be more adamant about low fat cheese. When I can use low fat, I do. In the beginning, when I was really trying to change my eating habits I would ONLY get low fat cheese, but now it depends on what kind of mood I am in. I usually still pick the low fat over the full fat.
