Recipe: Crockpot Steel Cut Oatmeal


Ingredients:
1 cup steel cut oats
3 cups water
1 cup almond milk (preferably)
Small crockpot

Options:
1 sliced banana
1 cup of walnuts (or your favorite nuts!)
6 sliced strawberries
Blueberries
1/4 cup of raisins
cinnamon
honey
...the possibilities are endless!

Directions:
I combined all ingredients in a small crock pot and cooked on low heat for 3 hours.  (I cooked this when I got home, while doing my evening chores, before I went to bed.)  During the last hour of cooking I sliced up one large banana and added it, along with 1 cup of walnuts.  I didn't stir it all up until the 3 hours was up.  This is a great "base" recipe.  You can make the steel cut oatmeal and add different toppings every day.  When I reheated the oatmeal later, I added about 2 tablespoons of almond milk.  I sweetened it with 2 tablespoons of honey...THAT'S IT!!!  I wouldn't suggest cooking the oatmeal with the strawberries, and if you choose apples, make sure you peel them first.  Otherwise, the oatmeal will be real bitter.  Hope you enjoy!

You know... I'm not a big oatmeal fan; I have texture issues. But based on these ingredients and the fact that it's in a crockpot... I think I might can roll with this. lol
