RECIPE: One-Pan Sausage and Veggies

Recipe: One-Pan Sausage and Veggies

One pan, less dishes = :).

Ingredients
2 red bell peppers, deseeded and diced
2 yellow bell peppers, deseeded and diced
2 orange bell peppers, deseeded and diced
½ onion, diced
1 to 2 lbs of Sausage of choice, links (I used Chicken Spinach Mozzarella Asiago, purchased from Sam's)
2 Tbsp. olive oil
2 cloves garlic, minced
(1) 14.5-oz can of diced tomato, drained
Salt and pepper

***fell free to use whatever veggies are to your liking, ex: mushrooms, zucchini squash, yellow squash, diced sweet potatoes, diced butternut squash, etc...)

Directions:
Preheat oven to 375°F. Layer all of the veggies, first, then sausages, on top, on one or two 9x13 baking pans, depending on the size of the vegetables you use. Drizzle on olive oil, and sprinkle on the garlic, diced tomato, salt, and pepper. Bake uncovered for one hour. Enjoy!
